Pumpkin Seed Dip

 
 

INGREDIENTS

  • 2 cups pumpkin seeds, soaked overnight
  • 1/2 cup sun-dried tomatoes, soaked 20-30 minutes
  • 2 Tbls olive oil
  • 1 Tbls fresh parsley, minced
  • 1 Tbls lemon juice
  • 1 tsp fresh oregano, minced
  • 1 tsp fresh thyme, minced
  • 1 tsp sea salt

DIRECTIONS

Blend all ingredients together in high speed blender. If you a thinner consistency is desired add a little more olive oil.
